Tzatziki is a healthy dip that is delicious on pitas but don’t stop there, I found out it is even good with eggs and lentils, get creative!

- 2 small cucumbers, shredded, place into a flour sac and squeeze them dry by twisting the towel
- 16 oz 2% greek yogurt, you can use full fat too
- 4 garlic cloves
- 2 T dill
- 1 lemon, juiced
- 1 t salt
- 1/2 t pepper
- 2 T extra virgin olive oil
You can make this dish in a bowl but I put everything in a food processor. If you use a bowl add everything but the yogurt, you will need to mince the garlic and chop the dill first. Mix well and slowly add in the yogurt.
If you used the food processor add all the ingredients together and blend.
Place into the refrigerator for a minimum of 2-3 hours.
