Chocolatey Whole Wheat Brownies

After multiple failed attempts at making a “healthy” whole wheat brownie there was finally some success! These brownies use 100% stone ground whole wheat pastry flour. Stone ground ensures that all parts of the wheat are present which provide you with fiber and vital nutrients. I cant go so far as to say these brownies are healthy and you can eat the entire dish of them but using whole wheat, egg whites and substituting 1/2 the butter with ricotta, they are definitely a better alternative then the traditional brownie!

These brownies are delicious, full of whole grains, cocoa powder and using ricotta cheese to replace some butter they will surely become a staple. These brownies are not gooey flat brownies they have some height to them. I baked them for 20 minutes but if you like your brownies fudgie you can try to take them out of the oven a few minutes earlier.

Ingredients

Dry Ingredients

  • 1 1/2 c stone ground whole wheat pastry flour
  • 1 t baking soda
  • 1 t salt

Over heat, in the pot

  • 1/2 c butter
  • 1/2 c ricotta cheese
  • 2 c coconut sugar
  • 3/4 c cocoa powder

Final Ingredients after chocolate mixture has cooled

  • 1/2 c egg whites
  • 1/2 c buttermilk
  • 2 t vanilla
  • 1 c chocolate chips

Method

  • 1)

    Preheat oven to 350 degrees and spray a 9×13 pan with olive oil.

Dry Ingredients

  • 1)

    Mix your dry ingredients together, set aside.

Over Heat

  • 1)

    Melt your butter over low heat in a pot.

  • 2)

    Add the ricotta cheese. Mix together.

  • 3)

    Add the coconut sugar and stir well.

    Your mixture will be lumpy at first. Stirring constantly.

  • 4)

    Add the cocoa and stir well, until shiny.

    Your mixture will become smoother after about 5 minutes over low heat.

Adding the last ingredients

  • 1)

    After your chocolate mixture has cooled down add a little to the flour, around 1/2 cup. Stir, then add your egg whites and vanilla and mix together, you want to be sure you do not cook the egg whites! Finally add the rest of the chocolate mixture, mix until combined.

  • 2)

    Place into the preheated oven at 350 degrees for 25-30 minutes.
